Happy Anniversary SPAM - Mini SPAM Nacho Burgers

    3 slices cut into small squares Cheddar cheese
    3 tablespoons diced red onion
    1 cup guacamole
    1 12-ounce package split and lightly toasted Hawaiian sweet rolls
    2 teaspoons honey
    2 teaspoons Chipotle Peppers in Adobo Sauce, minced
    6 slices Pepperjack Cheese, cut in half
    1 12-ounce can SPAM Classic cut into 6 slices
    3 tablespoons red wine vinegar
    3 diced Roma tomatoes

To make salsa, in bowl, stir together tomatoes, onion, vinegar, chipotle in adobo and honey.

Cut each slice SPAM® Classic in half. Lightly grill or cook SPAM until lightly browned on both sides. Top SPAM with cheese; heat until cheese begins to melt.

Place 1 slice SPAM on bottom half of each roll. Top each burger with guacamole, salsa and jalapeño. Cover with tops of rolls.
