1 lb. Italian sausage
1/2 c. chopped onions
2 c. chopped tomatoes, seeds removed
4 c. zucchini, julienne cuts (matchstick) OR coarsely shredded
1 tsp. lemon juice
1/4 tsp. salt
1/4 tsp. Tabasco sauce
1/4 tsp. oregano
Slice sausage in 1/4 inch slices; brown in wok or large skillet. Add onions when sausage is nearly done; drain. Add tomatoes, zucchini, lemon juice, salt, Tabasco sauce and oregano.
Cook, uncovered, for about 5 minutes, stirring frequently. Remove to serving plate; sprinkle with cheese. Serve with crusty Italian bread.
