Food for the Ice - Friday Nite Perch Fry

2 lb pounds of perch
1tsp salt
1/4 tsp pepper
2 cups flour
2 cups pancake mix – dry
2 cans of citrus flavored soda pop
2 Eggs
1/2 cup Cooking Oil

Combine the pancake mix – soda pop – salt and pepper and eggs and beat well.  Refrigerate the mixture for 1 hour to give it time to set-up.

Clean fish and wash good cold water is the best to use and pat dry.  Coat the fish with flour all over. Heat up the oil – Lakeshore Outdoors favorite oil to use with this recipe is Olive Oil.  Take the floured fish and dip and coat well in your pancake mixture and fry in the olive oil.  Fry these delicious perch until golden brown.  Serve with your favorite coleslaw.
