2/3 cup beer
1/2 cup flour
2 tablespoons cornstarch
Salt and pepper
2 cups vegetable oil, for frying
1 pound green beans, trimmed
Make the batter: beat beer with flour, cornstarch, and 1/2 teaspoon salt.
Pour oil into a deep fryer or heavy saucepan. Place over medium heat so that oil reaches 375 degrees F.
Toss green beans with the batter. Drop into the oil and cook in batches, about 3 minutes per batch, turning once. Beans will be lightly browned.
Place cooked beans on paper towels to drain. Serve with dipping sauce or mayonnaise if desired.
