Beef Fajita Tator Tot Hotdish

1 pound of stir fry beef
1 bunch green onions
1 green bell pepper
1 can Mexican Corn
1/2 jar of salsa
pickled jalapenos (to taste)
cayenne pepper (to taste)
crushed red pepper (to taste)
taco seasoning
Mexican cheese (to taste)
tator tots

Brown the beef, and drain, and then season with taco seasoning. Dice the onions and peppers, and add to the meat mixture. Add the veggies and the salsa. Season with the spices. Simmer until the liquid evaporates.

If making ahead of time, let cool, then top with the cheese and tots. Bake at 350 for 45 minutes, or until the tator tots are browned.

If making right away, cook the tots separately (while browning the beef). Top with the cheese and cooked tots.

Serve with sour cream and extra salsa.
