Spicy Southwestern Rub

2 tbs ground ancho or pasilla chile pepper
2 tbs paprika
1 tbs packed brown sugar
1 tbs ground cumin
2 tsp garlic powder
2 tsp dried thyme, crushed
1/2 tsp cayenne pepper

In a small bowl, combine all the ingredients with 2 tsp black pepper and 1 tsp salt.

Suggested meats: beef, chicken, pork, salmon. Will keep in an airtight container for up to 6 months.
