Sesame Ginger Spice Rub

1 tbs sesame seeds
1 tsp fennel seeds
2 whole star anise
1 (3 inch) cinnamon stick
1/2 tsp whole cloves
1/2 tsp whole peppercorns
1 tbs ground ginger
1 1/2 tsp packed brown sugar
1 tsp garlic powder

Heat a skillet over medium heat. Add sesame seeds, fennel seeds, star anise, cinnamon, cloves and peppercorns. Toast 4 to 5 minutes, stirring occasionally. Remove from the skillet and let cool.

Transfer the mixture to a spice grinder. Grind to a fine powder. Combine the ground mixture with the remaining ingredients and 1 tbs salt.

Suggested meats: scallops, shrimp, chicken or pork. Will keep, covered, for 1 month.
