Nonstick cooking spray
1/3 cup chopped onion (1 small)
2 cups shredded cooked leftover pork, beef, chicken, or turkey
3/4 cup frozen whole kernel corn
3/4 cup purchased salsa
1 4-ounce can diced green chili peppers, drained
8 taco shells
Chopped tomatoes, shredded lettuce, and/or shredded Mexican cheese blend (optional)
Lightly coat a medium saucepan with cooking spray. Heat saucepan over medium heat. Add onion; cook and stir until onion is tender. Stir in pork, frozen corn, salsa, and green chili peppers.
Cover and cook over medium-low heat about 10 minutes or until heated through, stirring occasionally. Spoon pork mixture into taco shells. If desired, top with tomatoes, lettuce, and/or cheese. Makes 4 (2-taco) servings.
