Grilled Corn with Hellmann's Mayonaise
3 ears corn on the cob
1/2 red onion, finely chopped
1/3 cucumber, diced
Handful of cilantro, roughly chopped
1/2 teaspoon sea salt
Dash of hot sauce
Juice of 1/2 a lime
2 heaping tablespoons of Hellmann's mayonnaise
Cook the corn on the grill. Keep turning until it's cooked evenly...charred but not overcooked.
Let the corn cool enough so that you can handle it with your hands. Shave the kernels off the ear with a sharp knife.
Place the corn, onion, cucumber and cilantro in a bowl. Toss. Sprinkle with salt, hot sauce, lime juice and mayo. Mix thoroughly. Serve on grilled burgers. This MUST be made and eaten the same day.
